Chef Rene’s recipe: Crêpes with Lemon and Butter

As we are approaching 2022, we invited personal chef Rene-Etienne to demonstrate how to make a ‘new year crêpe’ and share his recipe with us. This time, chef Rene will make the most traditional crêpe- with lemon and butter. In your own version, you are free to add in your fruits or sprinkles. Ingredients (For 4 servings)©

All purpose flour – 200g ©
Eggs – 2 pc ©
Milk – 400ml©
Oil – 1 tablespoon©
Salt – 1 teaspoon©
Sugar – 50g©m
Butter – some©
Lemon – 1 pc©


1. Add flour to the mixing bowl and dig a well.©

2. Crack the eggs and pour in oil, salt, sugar into the well. Mix gently with a spatula.©

3. Pour in half the milk and mix gently with a whisk to avoid lumps. When the dough is smooth, pour in the rest of the milk and mix gently.©

4. Heat a frying pan with butter. When it is hot, pour in a ladle of pancake batter and distribute it over the entire surface while moving the pan.©

5. When the edges start to pull away from the pan, run a spatula under the pancake and flip it to the other side.©

6. Leave to cook for 2 to 3 minutes, then set aside.©

7. Repeat step 4-6 until the batter are used up.©

8. Squeeze the lemon and sprinkle some sugar over each pancake. Finish and ready to be served!©
