剛剛過去的周末有朋友來到我家作客,大家來到時已用過午飯,於是我隨便拿出Chef Leo早前寫給我的一個前菜食譜,做了一個涼拌小食,十分適合夏天享用。早上處理好雞腳筋,朋友來到只需要 10分鐘就做好,十分簡單!她們吃過後都紛紛問我拿食譜呢,於是今天就在這裡都給大家分享下:
材料(2-3人份量):
雞腳20隻
牛油果 1個
車厘茄 10粒
薄荷葉 少量
即食杞子 適量
松子 適量
乳酪 4湯匙
鹽 少量
胡椒粉 適量
味噌涼拌汁 1茶匙
青檸汁 2湯匙
做法:
1. 雞腳煮10分鐘,用凍水沖走膠質,之後加入少量鹽和胡椒粉醃5分鐘。
2. 將雞腳筋從雞腳起出。放進雪櫃備用。
3. 牛油果去皮﹑去核,一半壓成蓉,一半切粒。
4. 車厘茄切半,薄荷葉撕碎備用。
5. 將牛油果蓉與乳酪拌勻,拌入車厘茄﹑杞子和松子,再加入薄荷葉絲及味噌涼拌汁。
6. 將雞腳筋鋪在牛油果蓉上,擠上青檸汁,最後放上牛油果粒即成。
