Pan-fried Oyster Cake (Serving for 4-6) mobichef.com

Oyster – 400 g
Pork – 80 g
Fujian Fish Cake – 80 g
Celery – 1 stalk
Scallion – 1 stalk
Spring Onion – 2 bundles
Egg – 1 pc ©mobichef.com
Sweet Potato Flour – 200 g ©mobichef.com
Water – some
Ginger – somemobichef.com

Steps:
1. Slice the pork. Marinate with 1/2 tsp of salt, 1/2 tsp of corn flour and 1 tsp of oil. ©mobichef.com
2. Slice the Fujian fish cake.mobichef.com
3. Dice the celery, scallion and spring onion.mobichef.com
4. Clean the oyster gently with salt and corn flour, be careful not to damage them! Rinse with water.mobichef.com
5. Put the oysters, pork, fish cake, celery, scallion and spring onion into a mixing bowl. ©mobichef.com
6. Add in sweet potato flour. Mix well with some water. Put in more sweet potato flour if it’s too watery. (Tips: Make sure the chopsticks touch the bottom of the bowl while mixing to prevent poking the oysters!)


7. Add 1 tsp of salt, 2 tsp of pepper and 1/2 tsp of sugar for seasoning. Mix well. ©mobichef.com
8. Heat up oil in the wok to fry the sliced ginger. Remove the ginger after they turn golden.mobichef.com
9. Pour the mixed ingredients into the ginger oil in the wok.mobichef.com
10. Pour in some beaten egg and fry until the cake turns golden. Finish.

Being raised in a Fujian family, Petty shared with us that women in her hometown are all experts in cooking! Under her mother’s influence, Petty has developed passion towards cooking since she was small. Years ago, with strong determination, she decided to give up her office job which she had worked for over 20 years, and became a professional cooking tutor and a private kitchen chef. Moreover, Petty never stops learning. She studied French cuisine at Le Cordon Bleu in Tokyo. After graduation, she also took a barista course to enrich her knowledge in F&B.©mobichef.com
