Biography

DoBee has more than 25 years of experience in F&B industry and began the chef training at the Culinary Academy when 16 years old.
He completed his degree at the Culinary Institute of America Napa Vally. Qualified as a lecturer in HACCP food hygiene Hong Kong.
Started his career as a professional chef at the Peninsula Hotel HK.
After that, the working cities were mainly in the United States and Hong Kong, and customers were in Taiwan, Shanghai, Macau, Portugal and Vietnam. Good at bakery, beef handling and Vietnamese cuisine. As a consultant chef, he brought Kings Garden become the world's only Michelin-branded Bib Gourmand hot pot for four consecutive years.

DoBee is good at using traditional flavors as the foundation, and then combining modern Western culinary techniques and ingredients to recreate new recipe, creating harmonious and eye-catching gourmet concertos all the time.

The lunch was very delicious and unique! there're some Vietnamese dishes that we've never had in HK, and even the more generic ones were excellent. It s good that the chef came out of the kitchen and introduced the dishes to us. He s very professional,friendly, and cheerful. highly recommend!!

Incredible dining experience.
Chef DoBee is professional, knowledgeable and also very friendly. We had My-Vietnamese Mother-in-Law Recipe and it’s amazing. All the dishes are delicious, while the Beef Pho is definitely the highlight of the night. The beef broth is clear and flavorful, matched perfectly with the melt-in-your-mouth aged beef. Thanks Chef DoBee for this unforgettable Vietnamese dinner :)

This is the 3rd time we have Chef DoBee:) I always love his teaching of the Vietnamese dishes, it do cheer up all of us and raise our appetite. We tried the Vietnamese home style sharing menu this time, it was a great experience and I love the yummy dishes. I am sure we will have him again very soon.

You couldn’t never go wrong with Chef Dobee! Great food, excellent presentation and super nice personality! Dinner of 13 and I don’t know how he could manage it but he serves everything perfectly and the whole dinner was superb! Basically, you could just leave the kitchen and Chef Dobee is able to turn everything magical. i am so grateful to have him for my father’s birthday and i fully recommend Chef Dobee to anyone of you for your next special occasion!

Chef DoBee definitely is one of my favorite chef in mobichef, he is nice and entertaining while he chats with you, but focus and determine to cook and prepare delicious good for his clients. We finally can try his modern style Vietnamese food which serve by person, not just the food is delicious, it was a great experience for all of us as well, highly recommend this menu for someone who loves tasty food with creative serving. I definitely would try his other menu.

I had a wonderful night with my husband in celebrating Valentine's Day. We are lucky enough to have chef Dobee preparing his beef omakase menu for us. The menu was full of surprises and the taste was unbeatable. We love the creativity and the presentation a lot!! The beef bikini was my favourite dish, absolutely outstanding. Looking forward to have our next encounter with chef Dobee!!

Chef Doobe was amazing! We have hired chefs to cook at home several times but Chef Doobe is by far the top of the chart! All his food was cooked to perfection and presentation was stunning. He was passionate about cooking and really created a wonderful atmosphere for our guests. Everyone had their thumbs up!

DoBee是一位非常健談的廚師。他說話風趣,光是在準備食物時,已不忘跟我們互動,向我們介紹部份食材及其製作方法。就在我們喝酒談天的期間,他已經預備好第一道前菜:Botan Ebi | Cajun | Blood Orange。牡丹蝦味道鮮甜,肉質軟糯,很配我們自家準備的日本清酒。

下一道菜是Hokkaido Jumbo Scallop | Saffron | Butternut Squash。帶子被一片燒過的檳榔菜覆蓋,中間還有一小塊煙肉。帶子肥大,煮得剛剛好,很鮮甜。配上呈氣泡形態的南瓜湯,感覺新奇,口感輕盈,南瓜味非一般濃郁!各人都愛上了這南瓜湯,紛紛多添了一次。放下刀叉後,再呷一小口白酒,享受。

友人早於晚飯前已開了瓶紅酒,讓它充分透氣,為了配搭接下來的芝士﹑火腿及和牛。第三道菜是Brioche I Italian Truffle I Camembert I 36 months Jamón Bellota。光看樣子,完全沒法想像它有多美味。烘烤過的多士,表面舖滿燒灼得焦脆的芝士,中層夾著伊比利亞火腿,混和著濃濃的黑松露香氣,非常鹹香惹味,跟紅酒真的是絕配。

然後是今晚的高潮,主菜U.S. Wagyu Zabuton | 7-Days Dry Aged | Sichuan Pepper | Apple-wood | Balsamic。廚師DoBee從廚房拿出一個金屬盒子,在眾人面前打開,一陣煙燻的氣味瞬間從盒子中傳出,是用蘋果木煙燻美國和牛。肥瘦適中的和牛鮮嫰多汁,光吃已經非常美味。但不得不提的,是旁邊的川椒汁。原來中式的川椒汁,跟和牛是非一般的匹配,這讓我們都感覺很驚奇!

由於有友人不吃牛肉,DoBee特地為她準備了N.Z. Lamb Cutlet | Sichuan Pepper | Apple-wood | Balsamic,很貼心。友人回說羊仔架沒有膻味,多汁,脂肪分佈均衡。我也知道DoBee從不讓人失望。

吃到這裡,各位都已經覺得飽。但DoBee繼續捧來一碟飯,Akita Rice | Abalone | Uni | Ponzu,還附上一碟辣椒油。因為這碟特辣辣椒油,才勉強吃得下。當然,鮑魚和海膽是十分鮮甜的。

輪到甜品登場,真的覺得既興奮又開心!47% Rum Baba | Pina Colada Crème,
充滿濃郁雲尼拿香氣的忌廉,口感幻滑,即使已經飽到上喉嚨,仍然忍不住一口接一口,把整份甜品都吃光。

最後,DoBee端來一碟自製的小熊作為禮物,為今晚的飯局作結。小熊是用咖啡﹑清酒及梅酒製成的。這晚,我們飲飽食醉,真的很滿足。非常感謝DoBee為我們精心炮製的美食,下次有機會一定會再預約DoBee的!

Chef DoBee is super friendly and nice, I was afraid that the 5 courses dinner menu can't fulfill my friends, no wonder, his portion is big and we all can't finish:) Food is good and I definitely would like to try his other menus.
