Chef Brook is the former Chef de Cuisine of The Ritz Carlton Hong Kong with over 13 years of working experience in 5-star hotels. During the time at the Ritz Cartlon, he oversaw four different kitchen outlets, as well as taking charge of the Chef table. He was selected to represent and provide advices in different Ritz Carlton properties and events globally, such as the Annual International Car Show hosted in Ritz-Carlton Guangzhou and C Formula Racing hosted in Ritz-Carlton Singapore. He has been also invited to cooperate with numerous luxury brands such as Godiva, Lindt Chocolate, Pierre Hermé, Graff Diamond, Nicholas & Bear, Grand Marnier, and Dom Perignon.
Prior to the Ritz, Brook has also worked in the Mandarin Oriental Hotel, Marco Polo Hotel and the Upper House. The experience as a veteran of many professional kitchens allows him to further innovate and to create unforgettable dishes.
Brook likes to make use of different ingredients to obtain the best results. His talent lies in reinventing dishes from traditional cuisine by giving it a new interpretation. His dishes truly present a style of cuisine that links between the classic and modern.
Brook has decided this is now the right time to embark on a new journey and set up his own consulting and catering business. His goal is to create unique but simple dishes that would be easily recreated and enjoyed at home.
