材料:
車厘茄 – 10粒
牛油果 – 1個
火箭菜 – 適量
特級初榨橄欖油 – 少許
鹽 – 少許
黑胡椒 – 少許
白酒醋 – 20 毫升©mobichef.com
雞蛋 – 1 隻
冰水 – 1 碗
做法:
1. 切好車厘茄和牛油果。©mobichef.com
2. 把車厘茄、牛油果和火箭菜放到碟上備用。
3. 煲 1升水。©mobichef.com
4. 水滾后加入白酒醋。(小貼士:醋能幫助蛋白凝固!)
5. 將熱水攪出漩渦。(小貼士: 將蛋放進漩渦能避免蛋白散開!)
6. 雞蛋輕力倒修漩渦中心,煮大約2分鐘。
7. 撈起水波蛋,放入冰水10-15秒。©mobichef.com
8. 修剪水波蛋的邊緣,放到沙律上。
9. 加入橄欖油 、鹽、黑胡椒調味,完成。
